Çökelekli Tokat Gözlemesi

Odun kömüründe yanan saç üzerinde yapılır. Arasına Tokat çökeleği konan gözlemeler o kadar güzeldir ki festivallerde özel günlerde halka bunlardan yapılarak ikram edilir. Bu gözleme diğer gözlemelere nazaran daha güzel ve lezzetlidir.

Malzemeler Hamuru İçin;
  • 6 su bardağı un
  • 125 gram margarin
  • 1 tatlı kaşığı tuz
  • Yeterince su
İçi İçin;
  • Yarım kilo çökelek
  • Yarım kilo kıyma
  • 1 çay kaşığı karabiber
  • Yarım demet maydanoz
  • Yarım demet taze soğan

Tokat Gözlemesi Yapılışı

  1. Önce gözleme hamuru yapmak için; un ve tuzu karıştırıp, suyu azar azar ilave edelim. Kulak memesi yumuşaklığında bir hamur yapacağız.
  2. İyice yoğurup üzerini örtelim ve hamuru dinlendirelim.
  3. Dinlenmiş gözleme hamurunu mandalina büyüklüğünde bezelere bölelim. Bezeleri unlayıp merdane ile ince olacak şekilde açalım.
  4. 1 tatlı kaşığı margarini tavada kızdırıp kıymayı kavuralım. Kıyılmış soğan ve maydanozun yarısını kıymaya ilave edip kıymalı gözleme harcını hazırlayalım.
  5. Kalan maydanozun yarısını da çökelek ile karıştırıp peynirli gözleme iç malzemesi yapalım.
  6. Hamurdan açtığımız ince yufkaların bir ucunu ortaya kadar kat yapalım.
  7. Diğer ucunu da katladığımız tarafın üzerine gelecek şekilde örtelim.
  8. Bunun üzerine peynirli gözleme harcı ve kıymalı gözleme harcı ilave edip sağ ve sol kenarlarını üst üste kat yapalım.
  9. Hazırladığımız gözlemeleri önceden kızdırdığımız sac üzerinde önlü arkalı pişirelim.
  10. Gözlemeler sıcak iken üzerine margarin sürüp servis yapabiliriz. Tokat usulü gözlemeler artık servise hazırdır. Afiyet olsun.
