Tokat ilimizin lezzetleri say say bitmez! Şimdi sizlerle Tokat'ın Zile ilçesinde yapılan Pestili tarifini paylaşacağız. Pestil hazırlanışı tıpkı bir kömeye benzerdir. Ortaya getirilen muhallebi kıvamındaki malzeme beyaz çarşaflar üzerine sıcak sıcak dökülerek ince bir kağıt haline gelinceye kadar çarşaf üstüne yayılır ve kurumaya bırakılır. Daha sonra şeritler haline kesilir. Sade olarak yenileceği gibi içine ceviz konularak küçük muskalar şeklinde dolma gibi sarılarak da yenilir.
pestil kavurması : 300 kadar üzüm pestili tereyağı üzerine istenildiği kadar kırılmış ceviz içi Yapılışı : Pestiller makasla veya elle küçük parçalara ayrılır 40 - 45 derece deki sıcak su ile yumuşayıncaya kadar ıslatılır. Bir tavada tereyağ ısıtılır. Süzgece alınan pestiller yağın içine konup karıştırılarak kızartılır. Servis tabağına alınır, üzerine ceviz serpilerek servis yapılır.
Pestil nedir ? üzüm, incir, dut, erik, kayısı gibi meyvelerin ezilip güneşe serilerek yufka biçiminde kurutulmasıyla yapılan bir tür ezmedir.
Pestil'in faydaları : Türkiyede ve çevre Ülkelerin mutfaklarında meyve özlerinin baskı altında yaprak şekli verilerek kışın tüketilmesi için yapılır.
